Kachalu is a traditional and quick recipe made out of boiled potatoes. Boiled Potato has a variety of vitamins and minerals in significant amount especially potassium, phosphorus, B-complex vitamins and vitamin C. contrary to our general perception, boiled potato is low in calories and fat and has high fiber content which gives us a feeling of fullness.
Ingredients:
a. 7 to 8 medium size boiled potatoes (aloo).
b. Coriander Leaves (Dhania): 25 gm/1 cup.
c. Green Garlic/Simple Garlic:1 cup/1 whole.
d. Dried Mango Powder(amchoor):1/2 table spoon.
e. Cumin seeds(jeera): 1/4 table spoon.
f. Little bit (pinch of) Asfoetida(heeng).
g. Salt(namak) as per taste.
h. 1 tablespoon Mustard oil.
i. 1 or 2 Green Chillis(Mirchi).

Method of Preparation:
1. First take coriander leaves, green garlic, dried mango powder, chillis in a grinder jar and add 1 cup water. Grind to make a smooth and fine mixture.
2. Now in a heated pan, add 1 tablespoon mustard oil, then add cumin seeds, asfoetida and stir till it becomes brownish in colour.
3. Now add medium cut potatoes in the pan and fry it for about 5 minutes on amedium flame. Cook till the potatoes become reddish.
4. Now add the paste in the pan and mix with potatoes. Now after 1 minutes add salt as per taste and mix well.
Kachalu is ready to serve. Enjoy with family and friends.
