RECIPE
Cupcakes:
2 1/2 cups gluten-free oat flour
3/4 cup organic brown sugar
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. salt
3/4 cup apple cider or apple juice
1/4 cup oil (any neutral oil will work: canola, vegetable, light olive, coconut, etc.)
1 tsp. vanilla extract
1 cup apple, finely chopped (I only needed one apple to get a cup)
Frosting:
3 cups organic powdered sugar
1/2 tsp. ground cinnamon
1/3 cup vegan margarine
3 Tbsp. almond milk (or other non-dairy milk)
1 tsp. vanilla extract
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add oat flour, brown sugar, baking powder, cinnamon, nutmeg, cloves, and salt. Stir well. Add apple cider, oil, and vanilla. Stir until smooth. Add apple, and stir in. Scoop batter into a cupcake pan (filled with greased cupcake liners). Bake 25-30 minutes. Let the cupcakes cool completely. While they are cooling make the frosting: to a bowl, add powdered sugar, cinnamon, and vegan margarine. Use an electric mixer to beat until well combined. Add almond milk, and vanilla. Beat until smooth. Frost the cooled cupcakes. Makes 12 cupcakes.
