I present Banana Muffin Recipe today. It is a homemade, quite easy and simple video showing how to make banana muffins from scratch. I give complete cooking instructions and measured ingredients that makes baking even easier. So if you are about to bake some good American style muffins then this cooking video is for you.
This video recipe is dedicated to people who enjoy baking goodies. I honestly believe that any respecting himself foodie will appreciate coffee or tea served with homemade pastry. What I like about baking muffins is that you can play with those recipes. You can add your favorite fruits and nuts or just skip sugar frosting like I did. I call this my healthy muffins recipe as I skip on coloring and frosting that saves lots of calories and also unnecessary chemicals. And in this case more simple taste is just better in my opinion. If you want to make this a vegan recipe just skip egg, add another banana and substitute melted butter with melted coconut oil. As I said before you can play with this recipe as cooking supposed to be your adventure in the kitchen. You can adjust this recipe and its ingredients to your lifestyle:)

Ingredients needed for this recipe:
Wet ingredients:
3 ripe bananas
1 large egg
1/4 cup melted unsalted butter

Dry ingredients mixed in separated bowl:
2 cups whole wheat flour
1/2 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda
1/4 cup dried cranberries
1/4 cup chopped walnuts

Additional ingredients: Cooking oil for greasing the baking dish.

First you will have to mash ripe bananas. You can use fork for this process. Add egg and melted unsalted butter. Mix using kitchen mixer. In another bowl combine all dry ingredients and then add them to the wet ingredients mix. Mix everything well until consistent batter. Grease the muffin baking dish with your choice of cooking oil or as I did with coconut oil. Pour batter on the baking dish. Preheat oven and then bake at 400 F / 205 C for 25 minutes. Cool muffins before serving. Muffins should regain their shape (bounce back) after delicately pressing their top surface. You may experience a lot of fun making this together with your kids at home. I personally like to bake when I’m more stressed out – somehow baking relaxes me. At this time of the year I like to add some cranberries and walnuts to my recipes but you can easily substitute those ingredients with you favorite components. Hope you enjoyed this video recipe.
