Bear Poop Cookies: Backpack Baking in the Canadian Rockies from Cookies Cupcakes and Cardio

Ingredients
• 1/2 cup butter
• 1/4 cup granulated sugar
• 1/2 cup brown sugar
• 1 egg
• 1/2 teaspoons vanilla extract
• 3/4 cup all purpose flour
• 2 tablespoons cocoa powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon baking powder
• 1/4 teaspoon salt
• 3/4 cup white chocolate chips
• 3/4 cup shredded coconut
• 3/4 cup pine nuts

Procedure:
1. Preheat oven to 350F. Line baking tray with parchment paper.
2. In the bowl of a stand mixer, fitted with the paddle attachment, cream butter and sugars until light and fluffy.
3. Continue to mix on low speed and add eggs, and vanilla.
4. Add flour, cocoa, baking soda, baking powder, and salt. Mix on low until ingredients are combined.
5. Add white chocolate chips, coconut and pine nuts. Stir until combined.
6. Bake in preheated oven for 12-15 minutes.
7. Allow to cool on baking tray until the cookies are able to be moved to a cooling rack with a spatula.
8. Store in an airtight container for 2-3 days.
