Mulled Beer
12 ounces St. Bernardus Prior 8, Belgian Dubbel style beer
Pinch of ground ginger
Pinch of ground nutmeg
Pinch of ground cinnamon
3 whole cloves
2 teaspoons sugar
1 egg yolk
1 tablespoon honey

1.Combine beer and spices in a saucepan over medium-low heat. Bring to a simmer, do not boil, the beer will foam but this will subside.
2.Whisk together the sugar and egg yolk. Temper the yolk mixture by very slowly adding two tablespoons of hot beer to the yolk and whisking thoroughly. Add the tempered yolk to the warm beer and heat for five more minutes. Add the honey and mix to combine. Strain mixture and serve in a beer glass or mug.
