BETH’S TOASTER OVEN DINNER RECIPE

INGREDIENTS:
3 Chicken drumsticks
3 Red Potatoes
1 lemon
1 garlic clove
1 tbsp Herbs de Provence
1 tbsp rosemary
2 tbsp olive oil
1/4 tsp Salt and 1/4 tsp pepper
1 Roma tomato
Herbs de Provence
Dijon Mustard for serving

METHOD:
Cut lemon in half and squeeze lemon juice over chicken, and under the skin. Set aside to marinate. Place 1 tbsp of olive oil in a dish, add garlic, herbs de provence and salt and pepper. Create a paste. Set aside.
Cut potatoes in half and then quarters, drizzle with 2 tsp olive oil, and 1 tbsp minced rosemary salt and pepper t taste. Toss well.
Drizzle Tomatoes with oil, salt and pepper.
Preheat oven to 425. Rub herb paste on the chicken, set on toaster oven tray add potatoes just to the right of it.
Roast chicken and potatoes 15-20 mins, add tomatoes roast 10 mins more
