Ingredients for Blueberry Muffins:
2 eggs (large), room temperature
1 cup granulated sugar
1 cup sour cream
1/2 cup extra LIGHT olive oil (not extra virgin)
1 tsp vanilla extract
1/4 tsp sea salt
2 cups all-purpose flour *measured correctly
2 tsp baking powder
2 tsp lemon zest (from 1 large lemon)
2 Tbsp lemon juice (from 1 large lemon)
1 1/2 cups (8 oz by weight) fresh blueberries, rinsed and dried
Ingredients for the Lemon Glaze:
1 cup powdered sugar
1 1/2 to 2 Tbsp fresh lemon juice
1/2 tsp lemon zest
