Coconut Mochi Cake Gluten Free Recipe

Happy Lunar New Year to everyone! It is the year of the horse.

I thought I would make you my version of a Coconut Mochi Cake, I don’t use mochi flour, I use regular fine rice flour. I have made it with mochi flour, but for some reason I like it made this way better. There is no xanthan gum in this cake. It will take you all of 5 minutes to put together and bakes at 350 degrees for 45 minutes. Test it with a toothpick when done.

This cake has a very fine texture, lovely sweet coconut flavor and somehow reminds me a little bit of Angel food cake (just my crazy opinion). Serve it topped with powdered sugar.
You can double this recipe and make it in a 9×13. It makes a great birthday cake (I have made it for such an occasion). I’m sure it would be delish with lemon or vanilla icing.
