Super Dough Cookie Mix, Alfajores and Cookie Ornaments

Dough
2 sticks of butter, softened
3/4 cup confectioners sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
Pinch of salt

Alfajores
1/2 recipe of Super Dough Cookie Mix
Cooking Spray
8 ounces white chocolate, chopped
8 ounces Dulce de Leche
2 tablespoons mini chocolate chips
Assorted sanding sugars

Cookie Ornaments
1/2 recipe of Super Dough Cookie Mix
Cooking Spray
1 cup confectioners sugar
2-3 tablespoons water
Assorted sanding sugars and candies
Assorted ribbons

For Dough:
1.In the bowl of a stand mixer fitted with a paddle attachment cream together butter, sugar and vanilla.
2.In a small bowl mix together the flour and salt. Add the flour mixture to the creamed butter and mix until just combined.
3.Remove the dough from the bowl and divide in half. If not using right away form each half into a disc, cover with plastic wrap and store in the refrigerator.

For Alfajores:
1.Preheat oven to 350 degrees. Grease one sheet tray with cooking spray.
2.Scoop one tablespoon of dough and roll it into a ball. Place on sheet tray and press the dough ball down with your palm so that it is 2-inches in diameter and 1/4-inch thick. Repeat with remaining dough. Place cookies in the oven and cook 15 minutes until the edges become golden.
3.While the cookies are baking set up a double boiler and melt the white chocolate. Meanwhile mix together the dulce de leche and chocolate chips in a bowl and set aside.
4.Remove cookies from the oven and allow to cool completely. When the cookies have cooled create sandwiches using 2 cookies and a large dollop of the dulce de leche mixture. Dip one half of the Alfajores into the melted white chocolate, dust with sanding sugars and place on sheet tray until the chocolate sets. Serve.

Yield: 6 Alfajores

For Cookie Ornaments:
1.Preheat oven to 350 degrees. Grease sheet tray with cooking spray.
2.Allow the dough to refrigerate for at least 30 minutes before using.
3.Roll dough to a 1/4-inch thickness. Cut cookie rounds with a 2-inch pastry cutter. Using a straw, punch out a hole at the top of the cookie for the ribbon. Place cookies on greased sheet tray and bake 6-8 minutes until golden. Remove cookies and allow to cool completely.
4. While the cookies are cooling combine the confectioners sugar and water to create a glaze. Dip the top side of each cookie into the glaze and allow any excess to drip off. Turn over and decorate cookies with candy and sanding sugar, allow the glaze to set completely. Tie a ribbon through each cookie and serve.

Yield: 12 ornaments
