The secret to this delicious, adobo-inspired fried chicken is a healthy heaping of citrus flavor.

INGREDIENTS:
2 lbs boneless, skinless chicken thighs, cut into chunks
Adobo seasoning, recipe follows
1 tsp garlic powder
1 cup all-purpose flour
1 tsp kosher salt
Oil, for frying
Sliced white bread
Lime wedges, for serving
Adobo Seasoning Ingredients:
1 Tbsp paprika
1 tsp onion powder
2 tsp dried oregano
1 tsp chipotle chile powder
1 tsp garlic powder
Juice of 2 limes

STEPS:
1.) Add all adobo ingredients into a small mixing bowl, combine well.
2.) Add the chicken chunks and adobo seasoning to a large ziplock bag, move chicken around so it’s covered well with seasoning.
3.) Marinate for at least 2 hours or overnight.
4.) Meanwhile, whisk together flour and garlic powder, and season with salt and pepper in a large bowl or casserole dish.
5.) Remove chicken from ziplock bag, and drain excess marinade. 6.)Dredge through the flour mixture and dust off any excess.
7.) Heat 4 inches of oil in a Dutch oven or high-sided skillet. Fry chicken at 370°F until brown and crisp, about 8–10 minutes.
8.) Drain on slices of white bread. Serve with lime wedges.
