Grain-Free Dutch Baby/German Pancakes Recipe:
Makes 20 pancakes

4 dozen eggs
3 c. coconut milk
3 c. water
1 c. sugar
2lbs arrowroot starch
1/2 t. salt
butter for the bottom of the pans (or coconut oil for dairy-free)

Preheat oven to 425 degrees. Mix together all ingredients except butter or coconut oil. Line 2 square baking dishes with parchment paper and add about 1 tablespoon of butter or coconut oil to each pan. Place pans in oven till butter or oil melts. When melted add 1 cup of pancake batter to each pan and return to the oven. Bake for 20-25 minutes until pancakes are puffed and golden. Serve with powdered sugar and lemon juice or toppings of your choice! Enjoy!
