Learn how to prepare coconut rice at home. This coconut rice recipe is easy to make, delicious and goes well with all sort of curries. I have used long grain brown rice for the recipe but you can also use Jasmine rice, Basmati rice or other rice varieties.

Ingredients/ Method

1.5 cups of rice
2 cups coconut milk
1 cup water
1 tbsp coconut oil

Method:
If you are using long grain brown rice, presoak them in water for 30 mins. For other varieties..you dont need to.
Then in a pot, add 1 tbsp oil. Let it melt. Add rice. mix well. Add coconut milk, water and stir together. Let it all cook for 15-20 mins. Cover with a lid and keep them temp on high. When milk comes to a boil, stir the rice and turn the heat down to med-low. Cook until water/milk has evaporated/dried up..Serve with your favourite curry.
