Easy Dairy and Gluten Free Cauliflower Soup Recipe with Kelsey Lee

Today I’m sharing with you one of our favorite homemade soups that is easy to make, rich in flavor, low in carbs, and requires just 5 simple ingredients! Get the delicious and nutritious, dairy free, gluten free recipe in this step-by-step video.

Ingredients:
•16 ounces steamed/cooked cauliflower
•3 cups of chicken or vegetable stock or broth (more or less can be added to suit consistency preference)
•1-2 tbsp extra virgin olive oil (depending on preference)
•2 tsp sea salt (more or less to taste)
•Ground pepper to taste

Directions:
Heat stock or broth in medium pot, bringing just below a boil.
Combine all ingredients into a blender or food processor and puree until smooth. The texture may vary depending on what blender you use.
Garnish with a drizzle of olive oil, melted butter, salt and/or pepper.
Serve and enjoy hot!
