Well dang it, if strawberries and meringues aren’t the BEST things in the world to eat together! Which is why this cupcake has been on the Crumbs & Doilies menu for years. And now it’s time you made it for yourselves!

Recipe…
For the strawberry goo –
400g strawberries, hulled
50g caster sugar

For the meringues-
4 egg whites, weighed
double that weight in caster sugar
pinch of salt
drop of vanilla extract

For the sponge –
125g unsalted butter, soft
125g self raising flour
125g caster sugar
2 lg eggs
1/4 tsp bicarbonate of soda
1.5 tbsp milk + 1/4 tsp vanilla
a few spoons of strawberry goo

For the buttercream –
100g unsalted butter, soft
225g icing sugar, sifted
a few meringues
goo!
