Here’s another delicious summer frozen treat (and ice-cream alternative) to add to your list of healthy snacks.

When we reach that point in summer when it’s crazy hot—you know, like now—it’s hard not to crave frozen everything. And by frozen everything I mean ice cream everything. So, I’m on a mission to amass as many easy, healthier alternatives as possible, and these frozen chocolate covered bananas are on the top of my list.

To make these:
4 bananas (ripe, but not overly soft)
1 cup chocolate chips (regular or vegan)
1 teaspoon coconut oil (refined or unrefined, which will lend a slight coconut flavor)
Toppings of choice

1. Line a baking sheet that fits in the freezer with parchment paper. Peel bananas and prep with popsicle sticks; set aside.

2. Place chocolate chips and coconut oil in a double-boiler or microwave-safe bowl and melt. If using the microwave, start with 25-30 seconds on high, stir, and then continue in 10-12 second intervals, stirring between each one.

3. Dip the bananas in the melted chocolate and then toppings of choice. Place on parchment and stick in the freezer for several hours or overnight before serving.
