A delicious, easy, and healthy brownie recipe you can enjoy anytime (EVEN FOR BREAKFAST!) Purple sweet potatoes are full of nutrients and antioxidants (plus they taste amazing!) I buy mine at whole foods, but you and now order them online too!

Ingredients: 2 purple sweet potatoes (350-400 grams raw), 1/2 cup cocoa or carob powder, 1/4 cup maple syrup. Optional: vanilla extract. chocolate chips.

Directions: Preheat oven to 375F. Wash, peel, and dice sweet potatoes. Steam for about 15 minutes or until soft. Add steamed sweet potatoes to a food processor and blend. Add in cocoa/carob powder, maple syrup, and vanilla extract if using (if it won’t blend add in a little bit of almond milk or water; about 2-4 tbsp). The batter should be quite thick. Add mixture to baking pan and bake for about 40 mins (this may vary depending on your oven and the mixture), you want the brownies to feel somewhat soft but firm (they firm up a bit more once they cool off). Slice them up and enjoy!

P.S. I like them to be somewhat fudgy and gooey, however, if you want them more firm or cakey bake them for a while longer.
