Shortcake has a very specific texture and flavor, this one is a little denser and chewier than a regular cake and is made with rice and tapioca flour. There is one trick ingredient that I use as leavening and it’s not yeast or eggs. Everything is free of the most common allergens. Dairy-free nut-free, gluten-free, soy-free and egg-free and corn-free!
