Pro cyclists are increasingly eating gluten free. Even when they’re racing, they still get the occasional dessert and sweet treat. Here’s the fruit cake recipe that Alberto Contador and the rest of Team Saxo-Tinkoff were treated to on the 2013 Tour de France.

1 tsp (6g) Baking Powder
2 cups (250g) Flour
Apricot’s or other fruit to taste
1/2 tsp (3g) Salt
3/4 Cup (180ml) Olive Oil
4 medium sized Eggs
Almonds – Chef’s choice
1/2 tsp (3g) Xanthan Gum
3/4 Cup (150g) Sugar
