Samosa is a popular Indian Snack stuffed with variety of fillings. Today we are sharing with you recipe for mini homemade vegetable cocktail samosas which are perfect for any get together. They freeze well too. You can just put them in oven to reheat them.

Ingredients:
3-4 potatoes
2 tsp salt
1 cup green peas/corn
1-2 cups chopped cabbage/carrots
1 tsp red chilli powder
1 tsp garam masala
1 tsp cumin powder
1 tsp amchur (Dry Mango Powder)
small piece of onion chopped
2 tbsp of oil
1/2 cup fresh chopped cilantro

For pastry shell/dough

1.5 cup all purpose flour (yields 24 samosas roughly)
1 cup of luke warm water ( or room temp)
2 tbsp of oil/ghee
pinch of salt and pepper

Oil for deep frying

Method: Cut Potatoes in big chunks and boil for 10-12 mins (or until fully done). Drain the water. Let potatoes cool down, then peel the skin off. Mash the potatoes and add in all the spices. Fry along with onions, corn, other veggies and peas. Combine well. Add cilantro and now the potatoes are ready to be stuffed.

Prepare the dough by mixing salt/pepper/oil and water.
Take 1 small portion of dough , flatten it out and cut in two halves. Fold the shell and fill the stuffing. Deep fry them until golden brown. Serve with Mint or Tamarind Chutney.
