Hot Chocolate with Peppermint Marshmallows

Peppermint Marshmallows:
Cooking spray
1 cup powdered sugar, plus more for dusting baking dish
3 packets unflavored gelatin, 3/4 ounces
1 cup cold water, divided
2 cups granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
3/4 teaspoon peppermint extract
2 cups peppermint candy, crushed into small chunks

Hot Chocolate:
1/4 cup whole milk
3/4 cup heavy cream
2 teaspoons sugar
4 ounces bittersweet chocolate, chopped
1 teaspoon vanilla extract

Peppermint Marshmallows
1.Spray a 9×13 inch baking dish with cooking spray and line with plastic wrap. Spray the top of the plastic wrap with more cooking spray and dust with powdered sugar.
2.Sprinkle gelatin over 1/2 cup cold water and mix to combine, set aside until the gelatin softens.
3.In a large saucepan over low heat combine sugar, corn syrup, remaining 1/2 cup cold water and salt. Once sugar melts, raise heat to medium-high and boil until a candy thermometer reads 240F degrees. Remove from heat and stir in the softened gelatin.
4.Carefully pour the hot mixture into the bowl of a stand mixer fitted with a whisk attachment and beat from low to high speed until tripled in volume. Add peppermint extract and 1/2 cup crushed peppermint candy, mix to combine.
5.Evenly pour marshmallow into prepared casserole dish, sift 1/4 cup powdered sugar evenly over top and refrigerate uncovered until firm, at least 3 hours.
6.Remove the marshmallows from the baking dish and cut into 1-inch cubes. Pour remaining 1 1/2 cups crushed peppermint candy into a shallow dish and coat marshmallows in peppermint candy. Add marshmallows to a mug of hot chocolate.

Makes 32 marshmallows

Hot Chocolate
1.In a medium saucepan over medium-high heat combine milk, heavy cream and sugar until steaming but not boiling. Remove from heat and add chocolate. Whisk until chocolate is completely melted. Stir in the vanilla extract. Serve hot, topped with a peppermint marshmallow.

Makes 2 mugs
