How to Clean Shrimp

1. If the shrimp still have the heads, twist them off and discard or save for stock.
2. Starting with the head end and using a pair of kitchen shears, cut through the back of the shell, moving downward and stopping at the tail. Remove the vein and discard. It is helpful to have a bowl of water nearby to rinse the shrimp after the vein is removed.
3. At this point the shell can be left on for recipes that call for shell-on shrimp. It can also be removed fully with the tail, or partially leaving the tail intact, depending on what the shrimp will be used for.
4. Save the shells in a plastic bag in the freezer to use for shellfish stock later on.
5. Place the shrimp in a bowl over ice and continue until all the shrimp are peeled.
6. Give the shrimp a final rinse and they are ready to be cooked.
