HOW TO MAKE THE BEST BANANA CAKE – with Citrus Cream Cheese Icing

This cake is beautiful and moist and complimented by the delicious citrus cream cheese icing! You really will love it!

Ingredients for cake mixture:

125 g softened butter
1 cup of sugar (use 1 1/4 cups if you like it sweet)
2 very ripe bananas
1/2 teaspoon of vanilla extract
2 eggs

mix together, then add:

1/3 cup of buttermilk
1 1/2 cups of self raising flour
1/2 teaspoon of bicarb soda

whisk some more, then add to your greased baking tin.

Bake in oven at 160 degrees celcius (320 fahrenheit for 45-60 mins, until golden brown)

For cream cheese icing:

90g cream cheese
45g softened butter
2 cups of icing sugar
2 teaspoons of lemon or orange juice (more if you like a lot of zing!!)
