Ingredients: (this makes about 15 tuna cakes)
350g tuna. I used 1 tin of chilli mango tuna (95g) and the rest plain tuna in springwater.
500g of potatoes (about 4 small potatoes)
1/3 cup of chopped spring onions
3 tablespoons of chopped flat leaf parsley
1 cup of corn kernels
1 tablespoon of chilli flakes
salt n pepper to taste
panko breadcrumbs
NOTE: If you are using plain tuna in springwater add 2 eggs, if you are using the flavoured tuna (which is normally in oil) you may add 1 egg if any at all. If you find the mixture isn’t holding together .. add 1 🙂
