Red Velvet Whoopie Pies
2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick butter, softened
1 cup sugar
2 eggs
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract
3/4 cup buttermilk
1 1/2 tablespoons red food coloring
1 jar Fluff

1.Preheat oven to 350 degrees. Line baking sheets with parchment.
2.Whisk to combine the flour, cocoa powder, baking powder, baking soda, and salt.
3.In the bowl of a stand mixer beat together the butter and sugar. Beat in the eggs, vinegar and vanilla extract.
4.Combine buttermilk and red food coloring. Add the buttermilk and flour mixtures to the creamed butter. Mix just to combine.
5.Spoon 1 tablespoon of batter per whoopie pie onto prepared sheet trays. Smooth the top of the batter before baking to get the right shape. Bake 10-15 minutes until the cookies set.
6.When the cookies are cool make sandwiches with the marshmallow filling.
