Happy Cinco De Mayo everyone! Well, I know it’s still a few days away, but for those that want to celebrate Cinco De Mayo in a low carb, keto kind of way, I figured I should post this low carb tortilla recipe early. I LOVE flour tortillas and was starting to miss them, but not any longer! These low carb tortillas did just the trick, and the best thing is they are perfect for my keto diet! Keto has been extremely rewarding and so much easier than I thought. I surprisingly haven’t felt deprived at all so far. It has hands down the easiest meal plan I’ve ever been on in my entire life!

Try these low carb tortillas if you need your fix for flour tortillas. These can be used for wraps, tacos, burritos, the works! I made tacos with mine and will be posting them soon!

Ingredients for my Low Carb Tortilla Recipe for Cinco De Mayo (Makes 2 tortillas):
-2/3 cup water
-1 egg
-1/2 tsp cumin
-1/2 tsp salt
-1/2 tsp black pepper
-1 cup flax meal
