INGREDIENTS

For the burgers:

½ pound ground beef (80%fat, 20% lean)
1 tablespoon Kosher salt
1 tablespoon black pepper
1 teaspoon chili powder
½ teaspoon cumin
1 red chili pepper, thinly sliced
2 tablespoons unsalted butter, at room temperature
4 slices Muenster Cheese

For the fixin’s:

2 Brioche rolls
Romaine lettuce
Dill pickles
Caramelized red onions
Sliced avocado

RECIPE

Heat a cast-iron skillet over medium-high heat.

In a bowl, combine the beef with salt, black pepper, chili powder, cumin, and red chili. Divide meat into 4 equal parts in the bowl. Shape each into a ball and smash down between your hands to flatten.

Assemble the burgers by placing one slice of cheese on top of a patty and placing a second patty on top of that cheese. Press both patties together to seal in the cheese. Do this for both burgers. Using a butter knife, smear butter on both sides of the patties.

Cook the burgers on each side until a crust has formed, about 4 minutes per side, 8 minutes total. At the 6th minute, place the remaining two slices of cheese on top of the burgers and cover the pan with aluminum foil to melt the cheese.

Slice the rolls in half and toast in a broiler. Rub both sides of the bread with garlic.

Assemble: lettuce, dill pickles, burger, caramelized onions, and sliced avocado, sprinkle with salt.

Cook with soul. Eat with pleasure!
