Vegan + Gluten Free Recipe by Vegan Acres.

An easy one bowl recipe with a few simple ingredients.

Ingredients:
2 tbsp Vegan Mayonnaise
2 tsp Rice Vinegar
1 tsp Lemon Juice
1 tsp Coconut Sugar
2 Cups of Napa Cabbage, shredded
1.5 Cups of Carrots, shredded
1 Cup of Sweet Peppers, sliced,
Himalayan Pink Salt
Black Pepper
Dill

Add mayonnaise, rice vinegar, lemon juice, coconut sugar and dill to a large bowl and mix well to create a dressing. Add napa cabbage, carrots and sweet pepper and mix well to coat veggies in dressing. Add Himalayan pink salt and black pepper to taste. Let coleslaw stand for 10 minutes to marinate.
Serve and enjoy!
