2/3 Cup of Caster Sugar (Super Fine White Sugar)
1/4 Cup of Boiling Water
1 Tablespoon of Gelatine Powder
300ml of Whipping Cream
125g of Plain Sweet Cookies
75g of Butter (melted)
500g of Fresh Mango (plus extra for garnish)
