Peaches and Cream Steamed Bun | Marcus Meacham

You’ll melt for this peachy take on an ice cream sandwich.

INGREDIENTS:
2 mantou steamed buns
Finely-ground sugar
1-2 Tbsp vanilla paste
2 Tbsp brown sugar
Pinch cayenne pepper
1 fresh peach, pitted and sliced into ½-inch slices
1 Tbsp butter
2 hefty scoops high-quality vanilla ice cream
½ box of vanilla wafers, pureed

STEPS:
1. Heat a steamed bun, then toss it in finely ground sugar and let sit at room temperature.
2. In a bowl, mix vanilla paste, brown sugar and cayenne pepper. Toss sliced peaches in the glaze.
3. Butter a grill pan and cook peaches on one side for about 1 minute. 4. Transfer to a plate to cool slightly.
5. Scoop a nice big scoop of ice cream, pack it tight, then roll it in the vanilla wafer powder.
6. To assemble, take a bottom bun and add peaches, then the rolled ice cream, followed by the top bun.
