Pork Medallions with Apple-Walnut Slaw – Everyday Food with Sarah Carey

This whole week I’ve been focused on creating meals that are not only flavorful but also super fast. Today’s recipe for sauteed pork medallions couldn’t be easier to make; just slice your pork tenderloin into rounds before cooking for a few minutes over a medium-high flame. Serve with a crunchy apple-walnut slaw to make this seasonal meal complete.

Sarah’s Tip of the Day:
This simple slaw can be made up to four hours in advance and kept at room temperature. The sweet and tangy flavors will continue to develop over time.
