Quinoa Coated Onion Rings | Meatless Mondays | Vijaya Selvaraju

Quinoa isn’t just for the health-conscious. It also makes onion rings incredible.

INGREDIENTS:
2 large Spanish onions, cut into ½-inch rounds and separated
2 cups white flour
2 cups puffed quinoa
2 cups breadcrumbs
2 tsp fresh thyme, chopped
2 tsp salt
1 ½ cups buttermilk
2 large eggs
2 Tbsp cornstarch
1 cup mayonnaise
2 cloves garlic, minced
Juice of ½ lemon
Salt, to taste
Oil for frying

STEPS:
1.) In a deep pot, heat 3 inches of oil to 350ºF.
2.) Add flour and onion rounds to a resealable plastic bag and toss.
3.) Combine puffed quinoa, breadcrumbs, thyme and salt on a plate.
Whisk together buttermilk, eggs and cornstarch.
4.) Dip each floured onion ring in buttermilk mixture to coat, followed by quinoa mixture.
5.) Fry in small batches for 2–3 minutes until crisp and golden brown, and drain on paper towels.
6.) Combine mayo, garlic, lemon and salt to taste for dipping sauce.
Serve hot onion rings with garlic mayo for dipping.
