You can vary the vegetable-noodles ratio as you like but we used:
Half of a zucchini
1 Small carrot
Half green pepper
Half red pepper
Quarter of an eggplant
Caju nuts to taste
Half of a Vidalia onion
Half of a purple onion
1 tbsp soy sauce
Curry powder and cayenne pepper to taste
