NARRATION:
In a medium saucepan, add 1/4 cup corn starch
Add a little less than 1/2 cup of xylitol
and 2 tablespoons of raw cacao powder or cocoa
You’re gonna want to stir until it is fully incorporated
Next add 2 and 2/3 cups of any milk that you’d like, just make sure it is ice cold so that the corn starch does not clump up
add a teaspoon of pure vanilla
and 1/8 teaspoon of pink Himalayan salt
On MEDIUM heat, continue to stir constantly so that it does not scald on the bottom.
This is what it looks like after a few minutes. The powder is all dissolved and there are no lumps.
Keep stirring for several minutes. It gets thicker as you go, so don’t walk away from it.
You’re very near the end when you see steam coming from the top.
The bottom of the pan will start to get thick, so keep stirring.
Look at the texture now after about 3 minutes.
Stop when you feel it is thick enough and it starts to boil.
This is looking nice and creamy. Thats about how you want it.
It will set up more as it cools
We eat it warm, but you can cover it and refrigerate til cool.
We put cacao nibs on top for prettiness and bite. You can add whatever you like or eat it plain.
