Ingredients:
Pastry: (this makes 4 pies – 11cm dishes)
1 egg yolk
1/4 cup of icing sugar
1 cup plain flour
100g butter (chilled)
Filling:
1 tin of condensed milk (395g)
the juice of two lemons
yellow food colouring
Meringue:
3 egg whites
1/2 cup icing sugar
1/2 teaspoon of vanilla extract
