Thai Pork Omelet I Good Times With Jen

Flavored with pork, scallions and more, this eggy dish makes a yummy any-time-of-day meal.

INGREDIENTS:
2 eggs
2 tablespoons ground pork
2 tablespoons scallions, chopped
1 teaspoon fish sauce
1/2 teaspoon soy sauce
Steamed rice to serve
Hot sauce to serve
Oil for frying

STEPS:
1.) Heat oil in a deep skillet. In a bowl, mix eggs, pork, scallions, fish sauce, and soy sauce until just combined.
2.) Carefully add the mixture into the hot oil, and allow to fry until puffed and golden brown on one side. Carefully flip over the omelette to cook the other side.
3.) Drain on some paper towel, before serving with freshly steamed rice and hot sauce.
