VANILLA CUPCAKES:

2 ½ cups all-purpose flour
1 cup cake flour
2 tsp baking powder
1 ¼ tsp salt
1 ¼ cup whole milk
¼ cup plus 3 tbsp heavy whipping cream
1 tbsp plus 1 tsp vanilla extract
1 cup unsalted butter, softened
2 ¾ cups sugar
3 eggs

Pre-heat oven to 350 degrees. Line two 12-cup baking tins with cupcake liners.

Whisk together the all-purpose flour, cake flour, baking powder and salt. Set aside.

In another bowl, combine the milk, heavy whipping cream and vanilla extract. Set aside.

Using a mixer, cream together the butter and sugar until light and fluffy for about one minute.

Beat in the eggs one at a time, scraping the bowl after each egg until incorporated.

Gently add 1/3 of the flour mixture. Then add 1/2 the milk mixture. Add the dry ingredients in 3 additions, and the milk mixture in 2. Scrape the sides of the bowl.

Fill the prepared cupcake liners with batter ¾ of the way full. Bake for about 20 minutes or until a toothpick inserted into the cupcake comes out clean.

Allow the cupcakes to cool in the pans for about 5 minutes and then remove them to completely cool on a wire rack.

VANILLA BUTTERCREAM FROSTING:

2 cups unsalted butter, softened
4 ½ cups powdered sugar
1 tbsp vanilla extract
1 tbsp heavy whipping cream
¼ tsp salt
sprinkles

Mix softened butter on medium speed in an electric mixer until smooth and creamy.

Slowly add powdered sugar, heavy whipping cream, vanilla extract and salt.

Increase speed to high and beat for 3 minutes. Decorate with sprinkles!
