The Better-For-You Chicken Mozzarella | Erwan Heussaff

This chicken and cheese combo just got better.

INGREDIENTS:
1/3 cup minced red onion
3 cloves garlic, minced
3/4 cup crushed tomatoes
1/4 cup sherry vinegar
1 pinch white pepper
1 tsp smoked paprika
2 tsp white sugar
1 tsp garlic powder
1/2 tsp salt
2 cups of cooked quinoa
2 x 150 grams pieces of chicken breast
salt and white pepper to season
Olive oil
Mozzarella cheese
Parmesan cheese (optional)
Fresh parsley
Chili flakes

STEPS:
1.) Fry off the garlic and onions in some oil in a medium hot pan for 2 mins.
2.) Add in all the other sauce ingredients and simmer for 10 mins.
3.) Flatten your chicken breast, season with salt and white pepper. 4.)Coat with quinoa.
5.) Shallow fry at a low to medium heat in at least 1/2 inch of oil for about 5 mins per side, until the chicken is cooked through.
6.) When your chicken is done, cover in parmesan and mozzarella. Put the on to let the cheese melt.
7.) Garnish with parsley and chili flakes. Season as needed.
