Here are my top 10 ways to eat healthy on a gluten-free diet. Living gluten-free can be so expensive. By going back to our roots and cooking and shopping like grandma did you can cut your grocery bill in half! Subscribe for more great tips and recipes!

Here are the top ten ways we save money and stay within our budget!
1. Buy in bulk – stock up when products you use are on sale
2. Buy directly from the ranchers and farmers growing your food and ask for seconds
3. Meal plan
4. Eat from your pantry
5. Cook from scratch – including snacks
6. Grow a garden
7. Can, dehydrate and freeze excess produce
8. Glean and barter for fruits and veggies you aren’t growing
9. Make your own flour and pancake mixes
10. Make your own personal care and cleaning products

Gluten and Dairy Free Pancake Recipe:
8 eggs
1/2 cup melted coconut oil
1/2 cup coconut milk
2 Tablespoons molasses
2 Tablespoons sugar (optional)
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon salt
3 cups gluten free flour blend (your can purchase mine on my Etsy store here: )
1 teaspoon baking powder
1 teaspoon baking soda

Blend eggs, coconut oil, coconut milk, molasses, sugar, cinnamon, nutmeg and salt.
Add in flour, baking powder and baking soda. Blend until smooth.
Add water or milk a little at a time to reach desired consistency 1/2 cup -1 cup total
Pour 3.5″-4″ pancakes on oiled griddle or frying pan.
Cook until bubbly then flip and cook until lightly browned on the bottom.

Serve warm with butter, fruit, syrup, peanut butter or anything else you want to try.
