Trail Mix Muffins Recipe: Backpack Baking from Cookies Cupcakes and Cardio

This is the first addition of our “Backpack Baking” series, where we take you on a hike to a place we call the “bat cave” to bake some trail mix muffins in our Bemco’s backpacker oven.

Trail Mix Muffins Recipe:
1 cup white All Purpose flour
3/4 cup whole wheat flour
1/4 teaspoon salt
2 teaspoons baking soda
2 cups trail mix (any mixture of nuts/chocolate candies)
1/2 cup brown sugar
1/4 cup white granulated sugar
1 cup mashed bananas (about 3 medium ripe)
1/2 cup milk (any % will do)
2 eggs
1/2 butter (melted)
