Declan McConnellogue wanted to experience the tastes of his childhood, so he built The Haven Smokehouse. On the shores of Sheepshead Bay in County Donegal on Ireland’s Wild Atlantic Way, Declan uses 10,000 year old turf to smoke salmon.
