No Bake Cookies Recipe:
3 1/4 cup oats
1/2 cup coconut oil
1/2 cup peanut butter
1/2 cup cashew milk
1 cup stevia (or whatever sweetener you like)
1/4 cup vegan cocoa powder
1/2 tsp salt
1 tsp vanilla

Instructions:
1.Measure out oats into a bowl and set aside
2. Place wax paper on counter for cookies once cooked
3. In a large sauce pan, combine coconut oil, peanut butter, cashew milk, stevia, cocoa powder, and salt.
4. Once ingredients are melted together, add vanilla and stir quickly, this will cause mixture to boil
5. remove from heat, add oats, and stir until mixture is thick and ingredients are well combined
6. Pour your cookies out place on wax paper
7. Let cookies cool in refrigerator (I place mine in the freezer) for 30 minutes.
8. Enjoy!

Berry CreamSicles Recipe:

1 cup blackberries
1 cup strawberries
1 can coconut milk full fat
1/4 cup honey
1 tsp vanilla extract
popsicle mold

Instructions:
1.Whisk together coconut milk, vanilla and honey and set aside
2. blend together honey and berries in blender to make puree
3.pour coconut milk mixture into popsicle mold half way
4. place a few whole berries in popsicle mold
5. top off the popsicle mold with berry puree
6. place in freezer over night
7. enjoy!

Coconut Fudge Recipe:

1 can coconut milk, full fat
3/4 cup vegan confectioner’s sugar
2 cups vegan chocolate chips https://enjoylifefoods.com/our-food/baking-chocolate/chocolate-for-baking-mini-chips/
3tbsp coconut flakes

Instructions:
1.In a pot over medium heat (no higher) combine coconut milk, chocolate chips and confectioner’s sugar until melted. Keep a close eye on this so you don’t burn the chocolate!
2. Pour mixture into 8X8 dish
3. Sprinkle coconut flakes on top
4. Place in the freezer over night
5. enjoy!
