Set oven to 180’c or 350’f
Bake the cupcakes in the oven for 12-15 mins
Ingredients:
sponge:
100g plain flour
100g caster sugar
50g veg oil
125ml water
Juice of half a lemon
Zest of 1 lemon
0.5 tsp baking powder
1 tsp vanilla
lemon icing:
300g icing sugar
50g dairy free margarine
juice of half a lemon
1 tsp vanilla
