Pan Seared Chicken with Balsamic Strawberries and Feta

1 heaping cup of strawberries, chopped
1 tbsp. balsamic glaze
2 tablespoons of chopped basil
1 tbsp. chopped mint
1 lb. thinly slice boneless, skinless chicken breast
1 tbsp. olive oil
Salt and pepper to taste
1/4 cup feta cheese, crumbled

In a small bowl combine the strawberries, balsamic glaze, basil and mint. Gently stir everything together and set aside  While they get to know each other you’re gonna get started on the chicken.

Heat olive oil in a large non stick saute pan over a medium high heat.  Season both sides of the chicken with salt and pepper and then get them into the pan.

Cook the chicken for two to three minutes per side, browning up each side as it cooks.  Once it’s done, remove the chicken and plate it up.

Spoon a couple of tablespoons of the balsamic strawberries each chicken breast.  Top with a tbsp. of feta cheese and enjoy.

Serves 2-4.
