Katie Quinn’s no frills avocado pesto recipe is not only super easy to make, but also goes well with anything – soba noodles, sandwiches, toast…and it’s a good excuse to use over-ripe avocados! Sometimes simple really is better.

INGREDIENTS
1 ripe avocado
large handful of basil leaves
some olive oil
some salt
juice from half a lemon
RECIPE
Put everything in the blender and blend, blend, blend!! When it’s the consistency you like it (we took ours to smoothie-like consistency), toss it with warm soba noodles or eat on its own with crackers or sliced bread.
Top with shredded Parmesan cheese and red chile flakes.
