INGREDIENTS
For the doughnuts:
1/2 cup mashed banana (from 1 – 2 very riped banana)
¼ cup coconut oil, melted
⅓ cup sugar
1 tsp vanilla extract
1 egg
¼ cup whole milk, warm
1 ¼ cup all purpose flour
1/2 tsp baking soda
½ tsp kosher salt
1/4 teaspoon nutmeg

For the glaze:
1/2 cup pure maple syrup
1 ½ cup powdered sugar
½ tsp maple extract (optional)

RECIPE

For Donuts:
Preheat oven to 350 degrees.

In a bowl, mix flour, sugar, baking soda, kosher salt, and nutmeg together. Mix well and set aside.

In another bowl, combine warmed milk, coconut oil, egg, mashed banana, and vanilla together.

Mix together dry mixture to wet mixture, be sure not to overmix. In a piping bag, pipe batter into donut pan.

Bake for 8-10 minutes until fluffy and golden brown. Remove from oven and cool.

In the meantime, work on maple and bacon glaze. 2 – 3 strips of thick cut bacon (applewood bacon from Trader Joe’s works really well)

For Glaze:

Cook bacon until crispy (about 5 minutes); Chop into small itty bitty pieces, then set aside.

Strain bacon fat into clean bowl – you should have 1-2 tablespoons. Mix with ½ cup maple syrup. Add 1 ½ cups powdered sugar. Stir to combine and set aside.

Once the donuts have cooled completely, dip into maple glaze and sprinkle generous amount of bacon on top. Let drip on a wired rack.
