BAKED MACARONI & CHEESE RECIPE:
INGREDIENTS:
Bread Crumb Topping:
– 2 Pieces of bread (I like the Food for Life brand because it’s gluten free & vegan)
– 1 tbsp of olive oil
– salt
-Gluten Free Pasta – I prefer the Tinkyada brand (you can find this at Whole Foods or online at Vitacost here: http://www.vitacost.com/tinkyada-brown-rice-elbow-pasta-gluten-free-16-oz)
Cheese Sauce:
– 1 1/3 cup of cashews (soaked in water for 2-3 hours)
– 1/2 cup of almond milk and 1/2 cup of water combined
– 1/3 cup of nutritional yeast flakes
– Juice from 1 lemon
– 1 garlic clove or 1/8 tsp of garlic powder
– 2 tbsp of olive oil
– 1 tbsp of white miso
– 1 tbsp of tahini
– 2 tbsp of tamari
– 1 tsp of onion powder
– 1/8 tsp of turmeric
– dash of cayenne pepper (optional)
– 1 tsp of salt (or to taste)
– Daiya Cheddar Style Cheese Shreds (optional)
