CHRISTMAS MORNING CROSTINI RECIPE
Serves 4

INGREDIENTS:
4 slices Ciabatta bread, toasted both slides
4 eggs
1 tsp (5 ml) water
1 tbsp (15 g) butter
1 tbsp (15 ml) shredded mozzarella cheese

Tomato “jam”
1 tbsp (15 ml) olive oil
10 oz (286 g) cherry tomatoes, sliced in half length wise
1 clove garlic minced
½ tsp (2.5 ml) Italian seasoning
1 tbsp (15 ml) fresh basil, sliced into thin strips
sea salt and pepper

METHOD:
Prepare tomato “jam”. In a large skillet add olive oil, tomatoes, garlic, salt and pepper to taste and Italian seasoning. Sauté tomatoes until they break down, release their juices. Continue to cook until mixture reduces and thickens. This can be done the day before. Cover and refrigerate and then warm on Christmas day in the microwave.

The morning of, toast bread both sides.

Spread toast with a smear of pesto, and a layer of tomato jam set aside.

Whisk eggs with water (figure 1 egg per person, 1 tsp water for every 4 eggs) The water will make the eggs fluffy.

In a small, non-stick pan, melt the butter on medium flame. Ad eggs, allow to set and then gently stir with a spatula, creating large fluffy curds. Once set, turn off heat add cheese and stir to combine.

Top toasts with eggs, a little sea salt and pepper and fresh basil. Place on platter et voila! A Christmas AM Crostini that will keep you set until Christmas lunch!
