BETH'S HOMEMADE BREAD RECIPE
Makes 1 Loaf

INGREDIENTS:
4 cups ( 480 g) of All Purpose Flour
1 Packet of Active Dry Yeast (2 1/4 tsp) (11 ml)
2 tsp (10 ml) salt
2 cups of warm water (112-115F degrees)
1 tbsp (15 ml) olive oil
1 cup (240 ml) of water for cake pan in oven

METHOD:
In a large bowl, whisk together the flour, yeast and salt. Then slowly add the water mixing all the while with a wooden spoon until a dough forms. In another large bowl, add the olive oil and coat the bowl with the oil with your hands. Then with your hand still covered in olive oil, grab your dough and place it in the oiled bowl, kneading it slightly in the bowl to incorporate the olive oil into it. Then cover tightly with plastic wrap and allow to rise at room temperature for at least 8 hours. This works really great if you do this before going to bed, and then allow it to rise "while you sleep".

Then once rise, remove the plastic wrap and turn dough out onto a floured surface kneading it for about 3-4 minutes then form it into a ball. Transfer to a parchment lined cookie sheet and allow to rise for 1 more hour.

Then place your oven rack in the lower third part of your oven. Pour 1 cup (240 ml) of water into a cake tin or pie plate, anything that will hold 1 cup of water and is oven safe. Place this under the oven rack. This will create steam while your bread bakes which will create a beautiful crust.

Bake bread at 400F (200C) for 40 minutes. Allow to cool slightly. Then cut your loaf in half and then cut those halves into slices.
