BLABARSSOPPA RECIPE:

INGREDIENTS

– 3 TBL Sugar
– 1 Lemon, Juiced
– 1 TBL Potato Starch
– 2 Cups Bilberries or Blueberries

DIRECTIONS

– Bring 1 1/2 cups of water to a boil and add sugar.
– Once sugar has dissolved, add berries, bring to a boil and cook for 5 minutes.
– Turn off the heat and mix with an immersion blender until blended thoroughly.
– Add the lemon juice and potato starch, whisking until blended with the berries.
– Return to heat until the edges simmer.
– Can be served cold or hot.
