BREAKFAST MUFFINS (How to)

Filled with lots of delicious goodness, these muffins are incredibly moist and perfect for breakfast! 🙂

Ingredients: (makes 12 small/medium muffins)

2 cups of wholemeal flour
1 1/2 cups of self raising flour + 1 teaspoon of baking powder
**(use plain flour + 2 teaspoons of baking powder as an alternative)
1/2 cup of almond meal
1/2 cup of coconut
1/2 cup of sugar
1 tablespoon of cinnamon
1/2 tablespoon of nutmeg
1 teaspoon of vanilla
1 tablespoon of honey
200g of berries (I used blueberries & raspberries)
1 carrot grated
2 apples finely diced (save a bit to top the muffins)
1 1/2 cups of juice (I used a mixed breakfast juice – no added sugar)
3 eggs
Raw sugar to top

Bake until skewer comes out clean and golden brown.
